For the beginning rocketeer, the Easy to Assemble (E2X) line of model rockets by Estes; are perfect. Each model comes with easy to follow instructions and prove ideal for individuals or for groups. Parts in the E2X line are clearly marked (some by color) for easy identification and for the youngest beginner, some models are snap-together.

For the youth ages Six - Seven, try the Estes Firestreak SST. This snap together model is color coded for easy assembly and takes less than an hour to assemble, even when constructed in a group.
If you are ready for an incrementally greater challenge or hosting youth ages Eight and Nine, try the Estes Apha III model rocket. The Alpha III has one piece plastic fins for ease of assembly and stability in flight but the body tube utilizes all the standard assembly components of more advanced rockets including nose cone, parachute recovery and a body tube.
